Picture meltwater running over stone, so cold it makes your teeth ache and so pure it almost tastes sweet. That is the image behind Ice Cap – a vodka where coolness and clarity are the whole point. No weight, no make-up, just a sense of ice, mineral and pale grain.

Ice Cap belongs to the UP series, Ultra Premium, which is our highest quality level. Here every nuance has been refined so that the finished vodka can be drunk entirely without a mixer – slowly, from a misted glass – and still have something to say.

Colour & Appearance

The finished vodka is glass-clear with an almost blue-white lustre in cold light. It moves easily in the glass, and served really cold it takes on an elegant, slightly denser texture that sits beautifully on the tongue.

Nose

The nose is cool and restrained. A damp, mineral note – like wet stone after rain – meets a thin ribbon of sweet barley. Further in there is lemon peel, a whisper of white flowers and a very faint, clean streak of charcoal.

Palate

The palate is fresh and precise. It begins with a mild barley sweetness that is quickly joined by a stony, mineral coolness. In the middle of the mouth the vodka is slender yet smooth, with a small citrus note that keeps everything lively. The warmth arrives late and cautiously, more a glow than a flame, and there is nothing rough or oily in the way.

Finish

The finish is long for a vodka, yet light throughout. Mineral, a hint of citrus and a last sweet note of grain linger on, and the mouth feels as clean and cool as after a glass of ice-cold water.

How to Use

The essence is mixed with vodka or neutral spirit. 20 ml makes 750 ml of finished drink that can be enjoyed straight away. Instructions are on the label.

Serving Suggestions

• Neat, straight from the freezer, in a small chilled glass.
• Vodka martini – very dry, with a lemon twist or an olive.
• With soda, ice and a long strip of lemon peel.
• With fish roe, oysters, smoked salmon and other pure flavours from the sea.
• With tonic and a slice of cucumber for a cool, elegant long drink.

About the Essence

Ice Cap is the vodka for finer occasions – the New Year’s Eve toast with roe on the side, the first martini of the year on the terrace, or the dinner where the drink should be as carefully considered as the food. Compared with our other vodka styles it is cooler and more mineral, with the sweetness of barley as a discreet counterweight.

That pure profile also makes it very rewarding in cocktails where the vodka is meant to be noticed, not merely to carry. The essence is also available in 25 litres for those producing on a larger scale.
