Anyone who already enjoys the light, soft Emerald style tends, sooner or later, to ask the question: is there a version with a little more of everything? The answer is Ultra Premium. The basic character is the same – smoke-free, friendly and smooth – but the body is bigger, the fruit darker and the spice more pronounced. This is the whiskey for the last glass of the evening rather than the first.

UP Emerald Whiskey Essence is made to be savoured slowly. Where its sibling in the Prestige range is fresh and green, this one leans towards raisins, apricot and nuts, with a creaminess that brings custard and soft toffee to mind. It needs neither ice nor mixer to show what it can do, but it copes happily with both.

Colour & Appearance

In the glass the whiskey turns a deep golden yellow with a copper tint at the rim, noticeably darker than the standard version. It leaves slow, dense curtains on the inside of the glass – a sign of its fuller body.

Nose

The nose is rich and warm. Dried apricots, raisins and baked apple meet vanilla custard and runny honey. Then come the spices: cinnamon, nutmeg and freshly planed oak, together with roasted hazelnuts and marzipan. Floating above it all is a light floral note and a little orange peel that keeps the aroma fresh.

Palate

The palate is round, creamy and generous. It begins with honey and soft toffee, moves on to dried fruit – raisins, figs and a hint of date – and then gains backbone from spicy oak, ginger and a pinch of black pepper. The toasted barley lingers in the background as a reminder of the family tie to the lighter Emerald, as does a streak of pear. The mouthfeel is almost oily, and a sherry-like nuttiness binds sweetness and spice into a whole that feels luxurious without being heavy.

Finish

The finish is long and warming. Spicy oak, dark chocolate and dried fruit linger on, and the vanilla returns at the end as a soft, sweet full stop.

How to Use

The essence is mixed with vodka or neutral spirit. 20 ml makes 750 ml of finished whiskey that is ready to drink at once. Instructions are on the label.

Serving Suggestions

• Neat in a tulip-shaped glass, at room temperature.
• With a couple of drops of water to open up the fruit and the spices.
• Old Fashioned with a sugar cube, aromatic bitters and orange zest.
• Alongside dark chocolate, nuts or a slice of apple cake.
• In hot coffee with cream when dessert ought to be drinkable.
