Far out in the wilderness, where the bogs stretch away and the wolf is said to slip past at night, the red berries ripen late in the autumn. They are sour, astringent and full of flavour – and that is precisely why they go so well with clear spirit and a little sugar. The drink has warmed many a gathering around the campfire, and it takes its name from the paw prints in the snow.

PR Wargtass Cranberry is our essence for exactly that drink. The result is red, tart and full of berries, with a freshness that makes it as natural in a glass of ice after a snowmobile ride as in a long drink on the summer terrace. Easy to make, and even easier to like.

Colour & Appearance

The finished drink is a clear ruby red, like lingonberry cordial or freshly pressed cranberry juice, and glows beautifully over ice. The sugar gives a soft, round body without it becoming as thick as a liqueur.

Nose

The nose is fresh and full of berries. Cranberry and lingonberry come first, tart and a little astringent, followed by redcurrant and a sweet note of raspberry. At the very back there is a hint of the forest – heather, moss and a trace of juniper – which gives the aroma its wild character.

Palate

The palate is tart first and sweet second. The fresh acidity of the cranberries makes the mouth water, the lingonberries add their typical, faintly bitter astringency, and the sugar binds it all together into a juicy, rounded berry flavour. It is a clean and uncomplicated taste – berries, acidity, sweetness and the warmth of the spirit in the background. It is that very astringency that stops the drink from ever becoming cloying; instead it leaves the mouth fresh and keen for more.

Finish

The finish is medium-long, fresh and dry. Cranberry skins and lingonberry linger with a fine tartness, and a faint sweetness is the last thing left on the lips.

How to Use

The essence is mixed with vodka or neutral spirit plus sugar. 20 ml makes 750 ml of finished drink. Instructions are on the label.

Serving Suggestions

• On the rocks in a short glass – simple and straightforward.
• With grapefruit soda and ice – the classic mix.
• With tonic and a wedge of lime for a drier, more bitter long drink.
• With cola for those who prefer it sweeter.
• With sparkling wine as a red, berry-bright welcome drink.
