Ask any bartender which bottle runs dry first and the answer is almost always the same: the white rum. It rarely gets the spotlight, yet without it half the cocktail list falls apart. The Mojito, the Piña Colada, the humble rum and cola – every one of them is built on a rum that is clean, dry and obliging, one that lifts the other ingredients rather than elbowing them out of the way.

White Baccara Rum is made in exactly that spirit. It gives you a light, elegant white rum where nothing sticks out and nothing is missing: a discreet sugar-cane sweetness, a little vanilla, a touch of almond and a bright streak of citrus. Colour & Appearance

Once mixed, the rum is perfectly clear and colourless, as bright as spring water. It moves lightly in the glass and looks every bit as clean as it tastes – ideal when the colours of the cocktail itself are meant to shine.

Nose

The nose is cool and restrained. Freshly pressed sugar cane and a soft note of vanilla come first, followed by blanched almond and grated lime zest. Deeper down there is a suggestion of tropical fruit – ripe banana, a little pineapple and a breath of coconut – but everything is held in a taut, dry register.

Palate

The palate is light, dry and smooth. It opens with a cautious sweetness that is quickly tightened by citrus and a clean, almost mineral freshness. Vanilla and almond sit like a soft cushion in the middle, while the banana and tropical fruit only flit past. The texture is silky without being oily, and the warmth arrives late and gently. It is precisely this neutral elegance that lets the rum melt into anything from sharp lime to creamy coconut without ever disappearing altogether.

Finish

The finish is short to medium in length, clean and dry. A little vanilla, a pinch of white pepper and a last splash of lime – and then the palate is ready for the next sip.

How to Use

The essence is mixed with vodka or neutral spirit, and the rum is ready to drink straight away. 20 ml makes 750 ml of finished spirit drink. Instructions are on the label.

Serving Suggestions

• A Mojito with fresh mint, lime, cane sugar and soda.
• Rum and cola with plenty of ice and a generous wedge of lime.
• A Piña Colada with pineapple juice and coconut cream.
• Shaken with lime juice and sugar syrup – the simplest and best rum sour there is.
