PR Lemon Rum Essence 20 ml

Almost every rum drink is finished with the same flick of the wrist: a wedge of citrus squeezed over the glass. The acidity and the aromatic oils in the peel are what make the rum wake up. So why not let the lemon join in from the start?

Lemon Rum is built on that idea. The base is a light, clean white rum, and over it lies a sunny lemon note – more peel and zest than sour juice, with a friendly sweetness that calls lemon drops to mind. That makes it a shortcut to refreshing long drinks: pour, top up with something fizzy, and you have a drink that tastes as though you went to some trouble. It is easy-going, uncomplicated and dangerously easy to like on a warm day on the patio.

Colour & Appearance

The finished rum is clear and colourless, with a clean lustre. In the glass with ice and a slice of lemon it looks as cooling as it tastes, and it lets tonic, soda and other mixers keep their own clear colour.

Nose

The nose is lively and sunny. Freshly grated lemon zest and lemon oil greet you straight away, followed by lemon drops and a little lemon balm. Beneath the citrus lie the discreet sugar-cane and vanilla notes of the white rum, which give the aroma its softness.

Palate

The palate is fresh, light and rounded. The lemon comes first – aromatic and zesty rather than sour – with a sweetness like lemon toffee and sugar syrup. Then the rum takes over with its soft sugar-cane note, a little vanilla and a mild warmth. A fine, faintly bitter note from the pith provides balance and ensures the drink never becomes fizzy-pop sweet. The whole is clean and thirst-quenching, with enough rum character to carry a drink all on its own. Lengthened with soda it stays bright and crisp to the last sip, and beside cola the lemon cuts neatly through the sweetness, just as a fresh wedge would.

Finish

The finish is medium-long, cool and citrus-fresh. Lemon zest and a light sweetness linger, with a last breath of vanilla.

How to Use

The essence is mixed with vodka or neutral spirit and can be enjoyed straight away. 20 ml makes 750 ml of finished spirit drink. Instructions are on the label.

Serving Suggestions

• With soda, ice and a slice of lemon – simple and cooling.
• With cola, where the lemon stands in for the wedge of lime.
• With tonic and a sprig of rosemary or thyme.
• With iced tea and mint in a big jug for a summer lunch.
• Well chilled as a lemon shot, or over lemon sorbet for dessert.
