PR G.P. Aquavit Essence 20 ml
Ask ten schnapps lovers what a proper aquavit should taste like and most will describe roughly the same thing: caraway, aniseed and fennel in warm union, rounded by a little sweetness. It is the style that stands on the table at every major celebration, the one that goes hand in hand with drinking songs, jars of herring and long lunches. G.P. – Grand Premium – is our take on exactly that classic.
Nothing is toned down here. The spices are generous, the body extra full and the sweetness just present enough for the schnapps to slip down smoothly. This is an aquavit with self-confidence, made for food with plenty of flavour: fatty herring, salty anchovies, smoked fish and strong cheese. Where milder schnapps disappear, G.P. stands its ground.
Colour & Appearance
The finished aquavit takes on a warm golden tone, a shade deeper than straw yellow – like burnished brass or light syrup. The drink is clear and glossy, and moves a little more slowly in the glass than an unsweetened schnapps.
Nose
The nose is warm and richly spiced. Caraway sits on top, bready and slightly peppery, but is joined at once by the sweet coolness of aniseed and the soft liquorice note of fennel. Beneath the spices lies a roundness of vanilla and light brown sugar, and the faintest trace of dried orange peel.
Palate
The palate is broad and generous. Caraway sets the tone straight away, powerful yet clean, and is then woven together with aniseed and fennel into that familiar aquavit character. The light sweetening shows mostly as a softness in the middle of the palate – it takes the edge off the spirit and lets the spices ring for longer. A hint of oak and fortified-wine fruitiness adds depth. The mouthfeel is full, almost oily, which means the schnapps can cope with even the heartiest dishes on the Christmas table without fading.
Finish
The finish is long and warming. Caraway and aniseed stay for a good while, with a sweet note of fennel as a final greeting before the next bite of herring.
How to Use
The essence is mixed with vodka or neutral spirit and can be served immediately. 20 ml makes 750 ml of finished aquavit. Instructions are on the label.
Serving Suggestions
- Ice cold with every kind of pickled herring – in mustard sauce, with onion or sweet-cured.
- With a creamy potato and anchovy gratin and smoked eel on the Christmas table.
- At the crayfish party, for those who want more caraway than dill.
- With mature hard cheese and caraway biscuits.
- A tablespoon in the herring pickle or in the dough for caraway bread.
