Some whiskeys demand a particular audience – and then there are whiskeys that everybody likes. Emerald belongs firmly in the second camp. The style is the bright, friendly one: no smoke, no sharp edges, just a softness that has even those who usually say no to whiskey asking for a top-up. It is as much at home in a tumbler by the fire as it is in a tall glass with ice and bubbles.

Emerald Whiskey Essence captures exactly that character. The fruit is green and fresh, the sweetness recalls honey and vanilla, and underneath it all lies a note of toasted barley that gives the drink its reassuring, bready warmth. The result is a whiskey that is easy to understand and hard to grow tired of.

Colour & Appearance

Once mixed, the whiskey takes on a pale golden colour, like light honey or ripe straw. It moves easily in the glass and looks every bit as uncomplicated and inviting as it is.

Nose

The nose is clean and fruity. Green apples and juicy pear come first, followed by vanilla custard and light blossom honey. Behind the fruit there is toasted barley and freshly baked bread, a gentle floral note like meadow flowers and a hint of nuttiness – think hazelnut and a little dried fruit.

Palate

The palate is soft from the very first moment. It opens sweet and fruity with apple, pear and a spoonful of vanilla, and the mouthfeel is smooth, almost silky. Mid-palate the barley steps forward with its toasted, slightly biscuity sweetness, alongside honey and mild toffee. A discreet spiciness of light oak and white pepper keeps the sweetness in check, and a faint sherry-like nuttiness adds depth without making the whiskey heavy. There is no smoke here whatsoever – only a clean, balanced and extremely easy-drinking whole.

Finish

The finish is medium-long, warm and soft. Vanilla, honey and toasted barley fade away at an unhurried pace, and right at the end there is a faintly earthy note that gives the close a little backbone.

How to Use

The essence is mixed with vodka or neutral spirit and can be enjoyed straight away. 20 ml makes 750 ml of finished whiskey. Instructions are on the label.

Serving Suggestions

• Neat in a tumbler, at room temperature or with a single ice cube.
• With ginger ale, plenty of ice and a generous wedge of lime – the style’s best-loved long drink.
• In hot, strong coffee with brown sugar and a lid of lightly whipped cream.
• Whiskey sour with lemon juice, sugar syrup and egg white.
• A hot toddy with honey, lemon and a clove on a raw, blustery evening.
