PR Dark Baccara Rum Essence 20 ml

Not all dark rums are heavy. Between the light white ones and the truly black molasses bombs there is a style that takes the best of both worlds: the colour and warmth of dark rum, but with the ease and fruitiness of the lighter kind. It is one of the world’s best-selling rum styles – and it is the one Baccara is modelled on.

Baccara is the shop’s own name for this profile, and the essence has been around for a long time for one simple reason: it is easy to like. It asks nothing of the drinker and rewards everyone – the guest who just wants something pleasant in a tall glass, and the enthusiast who notices how neatly the fruit, the toffee and the wood fit together.

Colour & Appearance

The finished drink is dark amber with red mahogany tones, clear and gleaming. Darker than a golden rum, but not impenetrable – the light still passes through the glass.

Nose

The nose is warm and fruity. Melted caramel and vanilla meet ripe banana, mango and a little grilled pineapple. Behind the fruit there is lightly toasted oak, a note of liquorice and a dash of nutmeg.

Palate

The palate is medium-bodied and strikingly smooth. Caramel and butter toffee lead the way, followed by banana and tropical fruit that give the drink a sunny, almost juicy side. The vanilla is clear but not perfumed, and the lightly toasted oak provides exactly as much structure as is needed to stop the sweetness falling flat. Towards the end comes the liquorice – discreet, slightly salty, like a dark thread running through the fruit. Nothing sticks out or scratches; everything is rounded.

Finish

The finish is medium-long and soft. Caramel, banana and toasted wood fade out at an unhurried pace, with one last little wink of liquorice and vanilla.

How to Use

The essence is mixed with vodka or neutral spirit. 20 ml makes 750 ml of finished spirit that is ready to drink straight away. Instructions are on the label.

Serving Suggestions

• Neat, over a large ice cube with a strip of orange peel.
• With cola and lime – the drink this style was born for.
• With ginger ale and a couple of dashes of bitters.
• In a Mai Tai together with lime, almond syrup and orange liqueur.
• With pineapple juice, coconut cream and ice in the blender.

About the Essence

Dark Baccara is part of the PR (Prestige) series and is the smoothest of the shop’s dark rum essences. Choose it when you want a dark rum that has plenty of flavour without dominating – for guests who claim not to like rum it tends to be an eye-opener.

In the larger sizes the essence is sold under the name Black Baccara: 280 ml, 1000 ml and 25 litres. If you prefer a heavier, blacker style, there are Extra Dark Reggae and Navy Rum in the range.
