Some drinks belong to a certain tempo. The clear anise spirit is one of them: a small glass, a carafe of iced water, a few dishes of this and that – and no hurry whatsoever. You dilute, watch the water-clear liquid turn milky white, take a sip, pick up an olive and let the conversation last as long as it likes.

PR Anise Spirit brings that experience home to your balcony. Mixed with spirit, the essence becomes a dry, clean and generously anise-spiced drink with no colour and no cloying sweetness. The anise is powerful, just as it should be, and the transformation in the glass when the water goes in is every bit as beautiful each time.

Colour & Appearance

Undiluted, the drink is completely clear and colourless, bright as spring water. Add cold water or ice and it clouds in an instant, turning white with a mother-of-pearl shimmer as the aromatic oils of the anise come out of solution like a fine mist. The more water, the softer the veil.

Nose

The nose is clean, strong and unmistakable. Star anise and aniseed dominate, with sweet fennel right beside them. After a moment a resinous, slightly piney note reminiscent of mastic appears, together with coriander, a pinch of cardamom and a trace of dried herbs from a sun-warmed hillside.

Palate

The palate is dry and direct. The anise strikes at once – intense, aromatic and almost cooling on the tongue – and is followed by the milder, green sweetness of fennel. The resinous herbal note lends a taut, grown-up character, and a light pepperiness keeps everything lively. Diluted with iced water, the mouthfeel becomes smooth and soft, and the drink is surprisingly thirst-quenching. Neat and cold in a schnapps glass it is considerably more forceful, with distinct warmth.

Finish

The finish is long, cool and clean. Anise and fennel linger for a good while, along with a dry herbal quality that leaves you wanting another bite of something salty.

How to Use

The essence is mixed with vodka or neutral spirit and can be enjoyed straight away. 20 ml makes 750 ml of finished drink. Instructions are on the label. In the glass, the spirit is diluted with cold water to your own taste.

Serving Suggestions

• With iced water on the side – dilute it yourself and add the ice last.
• With small plates: olives, sheep’s cheese, grilled octopus, yoghurt dips and bread.
• With grilled lamb, grilled vegetables and halloumi.
• As an ice-cold schnapps with pickled herring and shellfish.
• A splash over prawns or mussels in the pan, or in a tomato sauce for fish.

About the Essence
