Most white rums are built to blend in. This one is built to be heard. In the world of rum there is a small band of crystal-clear styles so packed with fruit that the whole room notices when the cork comes out – often called funky, and once you have fallen for them there is no way back. Overproof White Rum Essence gives you exactly that style.

The secret lies in the fruity ester notes: think bananas left a day too long, pineapple in the sun and freshly pressed sugar cane. Alongside them comes something green and a little wild – grass, olive, a hint of glue in that way rum obsessives adore. The flavour cuts straight through juice, syrup and ice, which makes it the bartender’s secret weapon.

Colour & Appearance

Once mixed, the drink is water-clear and bright, without the faintest tint. It looks innocent in the glass – but give it a swirl and the aroma rises to reveal something quite different from a neutral cocktail base.

Nose

The nose is big and exuberant. Overripe banana and grilled pineapple arrive first, followed by fresh sugar cane juice, newly mown grass and green olives in brine. Behind them sits a note of solvent and nail varnish – in the best possible sense – with white pepper and a little citrus peel.

Palate

The palate is intense from the very first drop. The attack is fruity, almost sweet, with banana, pineapple and mango, yet the drink is dry at heart and soon turns green: sugar cane, grass, a saltiness reminiscent of olive brine. Mid-palate the pepperiness arrives – white pepper, ginger, a touch of clove – and gives a distinct bite. The whole is oily, full-bodied and lively at once, so rich that a little is enough to put its stamp on an entire drink.

Finish

The finish is long, warm and fruity. Banana and pineapple fade slowly, while pepper and a green, faintly bitter sugar cane note linger longest. The mouth is left clean and dry, never sticky.

How to Use

The essence is mixed with vodka or neutral spirit. 20 ml makes 750 ml of finished spirit that can be used straight away. Instructions are on the label.

Serving Suggestions

• With grapefruit soda, a wedge of lime and plenty of ice – simple and irresistible.
• A splash floated on top of a Mai Tai or another tiki drink for extra fruity aroma.
• In rum punch with lime, sugar syrup, nutmeg and a dash of bitters.
• With ginger beer and lime for a peppery highball.
• A few drops over grilled pineapple or in a fruit salad with lime.
