Kippis! There is vodka that wants to impress, and then there is vodka that simply wants to be honest. Kasken Kippis belongs to the latter kind: a straight, unpretentious barley vodka of the sort that is set on the table after the sauna, poured without ceremony and gone in a single swallow along with a piece of dark bread and something salty.

Barley makes a different kind of vodka from wheat. It turns out lighter, tauter and fresher – less bread, more field of grain on a cool morning. The essence captures precisely that crisp purity and adds a little natural sweetness, so the drink feels soft in spite of its no-nonsense style.

Colour & Appearance

In the glass, Kasken Kippis is as clear as spring water. It is light and lively rather than viscous, and straight from the freezer the glass instantly takes on a white film of mist that promises chill and freshness.

Nose

The nose is very clean, almost airy. A faint note of malted barley and dry straw, a little like the smell inside a barn, meets a fresh sweetness that calls boiled sugar to mind. No spices, no weight – just grain and cold air.

Palate

The palate is crisp and straightforward. First a lightly sweet, grainy note of barley, then a clean, cool mid-palate where nothing jars. The mouthfeel is soft but leaner than that of a wheat vodka, which makes it come across as especially fresh. A small peppery spark towards the end reminds you there is spirit in the glass, but the warmth is kind and brief.

Finish

The finish is short, dry and very clean. A last hint of sweet barley flickers and disappears, leaving a fresh, almost water-clear feeling that makes the vodka dangerously easy to drink with food.

How to Use

The essence is mixed with vodka or neutral spirit. 20 ml makes 750 ml of finished drink that can be served straight away. Instructions are on the label.

Serving Suggestions

• Freezer-cold schnapps with rye bread, pickled gherkins and smoked fish.
• Dissolve salty liquorice (salmiak) sweets in the bottle for a salmiak shot of your own.
• With grapefruit soda and plenty of ice – a fresh long drink for a summer evening.
• With a lingonberry or cranberry soft drink and a slice of lime.
• After the sauna, plain and simple, with a glass of water on the side.
