Pink grapefruit is the most grown-up member of the citrus family. It has the juiciness of orange and the freshness of lemon, but also something the others lack: a fine, appetising bitterness that stops the flavour from ever being one-dimensional. That is why grapefruit turns up in so many modern drinks – it adds character without taking over.

FS Pink Grapefruit is the fruit shot for you if you feel that sweet tastes best when it meets a little resistance. The sugar rounds things off and brings out the red, sun-ripened side of the fruit, while the acidity and gentle bitterness hold everything in taut balance. The result feels fresh, a touch sophisticated and surprisingly versatile behind the bar.

Colour & Appearance

The finished drink gives a fresh, clean impression, with a lightly syrupy body from the sugar. Well chilled in a misted glass, with a thin slice of grapefruit on the rim, it looks as refreshing as it tastes.

Nose

The nose is bright and citrus-clear. Freshly peeled grapefruit with essential oils from the zest comes first, followed by juicy red flesh and a sweet note of blood orange. Deepest in there is a green, slightly herbal nuance reminiscent of zest and white pith – the thing that gives grapefruit its personality.

Palate

The palate begins tart and juicy, like the first spoonful from a halved fruit sprinkled with sugar. The sweetness meets it straight away and softens the opening, before the characteristic bitterness steals in and provides structure. That bitterness is fine and clean, never harsh, and works rather like the tannins in a good tea: it makes the next sip taste even better. In the midst of it all is a red, almost berry-like fruitiness that sets pink grapefruit apart from the yellow kind. The spirit stays in the background and mostly heightens the warmth of the citrus oils.

Finish

The finish is long for a fruit shot. The bittersweet note of the peel remains, together with a fresh acidity that cleanses the palate, and the mouth feels dry and lively afterwards. That makes the shot excellent company before a meal.

How to Use

The essence is mixed with vodka or neutral spirit, plus sugar. 20 ml makes 750 ml of finished fruit shot. Instructions are on the label.

Serving Suggestions

• A chilled shot as an aperitif before dinner.
• With tonic, ice and a slice of grapefruit – bittersweet and stylish.
• With grapefruit soda, lime and a pinch of salt on the rim.
• With soda water and a sprig of rosemary as a light spritzer.

About the Essence
