White rum of this kind is defined by its purity. Where dark rums carry heavy notes of molasses and oak, the light style is cool, restrained and elegant, with no more than a suggestion of sweetness. That makes it the most versatile bottle in the entire drinks cabinet.

Colour & Appearance

The finished rum is crystal clear and bright. The body is light and lively – a rum that looks as fresh as it tastes.

Nose

The nose is discreet and clean. Vanilla and pale sugar meet almond and a fine citrus note of lime and lemon peel. Further in there is a faint tropical fruitiness – banana, pineapple and a little coconut – along with a cool, almost floral lightness.

Palate

The palate is dry and soft. A gentle sugar-cane sweetness opens, followed by vanilla, marzipan and a whisper of apricot and ripe banana. The citrus brings freshness, and a mild pepperiness at the end gives the rum a taut close. Nothing sticks out, and that is the whole point: this rum is built to play along with lime, mint, fruit and cola, and to let them shine.

Finish

The finish is short to medium, clean and lightly sweet, with vanilla and a hint of white pepper. The palate is left fresh and ready for the next drink.

How to Use

The essence is mixed with vodka or neutral spirit. 280 ml makes 15 × 700 ml, 10.5 litres of finished rum in total. Mix one bottle at a time or the whole batch in one go. Instructions and further information are on the label.

About the Essence
