Nose

The nose is fresh and green. Cooked agave – sweet, a little like baked sweet potato with honey – meets lime peel and grapefruit. Then come white pepper, fresh herbs such as mint and coriander, and a mineral, earthy note that calls to mind wet stone after rain.

Palate

The palate is lively and clean. The natural sweetness of the agave arrives first, round and slightly vegetal, followed by a wave of citrus. Then comes the pepper: white pepper and green chilli that crackle on the tongue without burning. Herbal and grassy notes bring freshness, and a touch of salinity and minerality binds it all together. The mouthfeel is soft and lightly oily – a long way from the harsh spirit many people associate with the style.

Finish

The finish is medium-long, peppery and fresh. Agave, lime and a clean mineral note linger, with a pleasant warmth.

How to Use

The essence is mixed with vodka or neutral spirit. 50 ml makes 2.25 litres of finished spirit. Instructions are on the label.

Serving Suggestions

• Neat in a small glass, with salt and a wedge of lemon or lime on the side.
• Margarita with lime juice and orange liqueur, salt rim on the glass.
• Paloma with grapefruit soda, lime and a pinch of salt.
• With orange juice and a dash of grenadine that sinks to the bottom.
• In a marinade for prawns, chicken and fish along with lime and chilli.
